banana crumb muffins - the crumb topping adds a really nice, crisp contrast to the fluffy muffin. ♡

ingredients makes 10-12

• 1/3 cup melted butter
• 3/4 cup granulated sugar
• 1 egg
• 3 bananas, mashed
• 1 1/2 cups all-purpose flour
• 1 teaspoon baking soda
• 1 teaspoon baking powder
• 1/2 teaspoon salt

for the crumb topping

• 2 tablespoons all-purpose flour
• 1 tablespoon butter (not melted)
• 1/2 teaspoon ground cinnamon
• 3-4 tablespoons brown sugar

directions

1. preheat oven to 375 degrees.
2. mix wet ingredients - melted butter, egg, sugar and banana.
3. sift in the dry ingredients and mix until just combined.
4. fill lined muffin tin about 2/3 of the way.
5. in a separate bowl, combine ingredients for the crumb topping and mix until butter is as evenly distributed as possible.
6. sprinkle on top of each muffin and bake for 18-20 minutes.
